Raspberry mousse

Ingredients

300 gram frozen raspberries

50 gram caster sugar

1 1/4 teaspoon powdered gelatine soaked in 3 tsp brandy

2 eggwhites room temperture

150 ml cream


Directions

sprinkle gelatin over brandy and soften 5 mins food process berries and sugar do not sieve, i like pits set over sauce pan and moderate heat until puree becomes hot not simmer whisk gelatin in separate white and beat until thick not stiff whisk cream until soft fold puree into cream after all cooled down add white in a batch
