Red Lentil and aubergine curry (3 points)

Ingredients

1 Onion chopped

2 cloves garlic crushed

2 medium curry powder

1/2 tsp Salt

1 aubergine

175 grams red lentils dried split

600 milliliters vegetable stock

100 milliliters low fat coconut milk

2 tbsp coriander choped


Directions

cook onion and garlic until soft, add curry powder. Cook out Add aubergine, lentils, salt and stock. Simmer for 30 minutes. Stir regularly. Once lentils are cooked through (tender and mushy) add the coconut milk and coriander. Mix well heat and serve.

I made this last night for my wife and I. We both really enjoyed it. I'd probably add a little chilli if it was just for me though.
