Red Mashed Potatoes with Bacon

Ingredients

5 pounds Little red potatoes

3/4 cup Sour cream

1/2 cup Milk

3 tablespoons Butter

Salt and pepper to taste

3 cups shredded cheddar cheese divided

1/2 pound Bacon cooked and crumbled

3 Green onions sliced


Directions

Boil potaoes till tender, drain. Transfer to mixing bowl. Add sour cream, milk, butter, salt and pepper. Beat on med-low till light and fluffy. Stir in 2 cups of cheese, bacon and onion. Transfer to a 3-quart dish. Top with remaining cheese. Bake at 350 degrees uncovered 30 minutes. (If making ahead of time, bake 1 hour.)
