Restaurant Style Mexican Rice

Takes a while to cook, but well worth the wait!

Ingredients

1 cup Long Grain Brown Rice raw

3 tablespoon Bacon grease (or cooking oil)

1/2 cup Onion chopped

1/2 cup Carrot chopped

1 clove Garlic minced

1/2 cup Tomato sauce

2 cups Chicken Broth

1 teaspoon Salt


Directions

Heat bacon grease on medium heat. Add raw rice, cook until golden brown. Take caution not to burn the rice. Add in onions, carrots and garlic, saute until onions are tender. Add in tomato sauce, chicken broth and salt. Increase heat to high and bring to a boil. Lower heat to medium, cover and cook for approximately 45 minutes or until rice is tender.

I can't give it five stars because I used this as a base recipe to help get rid of some extra clutter in the pantry. It worked great for me though. I had never fried rice before, so we will probably be eating it for the remainder of the week as I practice.
