Rhubarb Crunch

Ingredients

1 cup Flour sifted

3/4 cup oatmeal uncooked

1 cup Brown sugar firmly packed

1/2 cup Butter melted

1 teaspoon Cinnamon

1 cup Sugar

2 tablespoon Cornstarch

1 cup Water

1 teaspoon Vanilla

4 cups Rhubarb fineley diced


Directions

Crunch mixture: Combine first 5 ingredients (flour, oatmeal, brown sugar, melted butter, cinnamon). Press one half of mixture into a greased 9x13 inch baking dish. Cover with rhubarb. Combine remaining ingredients (sugar, cornstarch, water and vanilla). Cook until thick & clear. Pour over rhubarb in baking dish. Top with remaining crumbs. Bake in moderate oven, 350 degrees, until bubbling and rhubarb is tender.

love the tart combined with crunch

To be honest I didn't have brown sugar so I used granulated caster sugar. I halved the sugar in the crunch parts - but this dessert still turned out wayyyyy tooooo sweeeeet. I baked for 1 hour 15 min at 176 celcius but it still wouldn't brown. Maybe it'll get crunchy after it cools off so tomorrow I'll taste it again..? :-)
