Richard Simmons Banana Pancakes

Ingredients

1 ds Salt

1/2 ts Honey

1 1/2 c Low-fat milk

1/2 ts Ground cloves

1/2 ts Vanilla extract

1 1/2 ts Baking Powder

1/2 c Finely chopped walnuts

1 1/2 c Whole wheat flour

1 ts Vegetable oil

1 banana Very ripe

1/2 ts Ground cinnamon

1/2 ts Ground nutmeg

1 lg Egg


Directions

In a large bowl, mix first 6 ingredients until well blended. Make well in the center of the mixture. In a separate bowl, beat together the egg, oil, honey, milk and vanilla extract. Slice banana in quarters lengthwise, then slice horizontally into very thin pieces. Add egg mixture, banana and walnut into the well of flour. Stir ingredients until well blended. Add a little more milk if necessary, until the mixture has a pourable consistency. Make silver dollar-size pancakes and cook in a preheated nonstick Teflon pan. The proportion of spices is very high - cut back on nutmeg and cloves. Improved by slices of fresh banana on top! Traditional pancake artists may want to cut the whole wheat with some amount of white flour.
