roasted parsnip and garlic soup

Ingredients

1.5 kg parsnip peeled, diced

2 brown onions peeled, chopped

1 tablespoon Maple syrup

Olive oil

Salt

3 cups boiling water

4 teaspoons vegetta

6 bulbs Garlic peeled

Sour cream


Directions

Place parsnip, onions and garlic in roasting pan. Drizzle with little oil, salt and pepper, toss Roast at 200C for 20mins. Drizzle with maple syrup and cook for another 10mins Place roasted vegetables into a pot and add water and vegetta Bring to boil, use blender to blend vegetables Serve with tablespoon sour cream and slice toast
