Directions

preheat oven to 425. Crush 1 clove garlic, mix with salt. Rub mixture over pork. Place fat side up in roasting pan. Roast 30 min. Meanwhile, thinly slice potatoes and coarsley chop onion. Crush remaining garlic, toss with potatoes, onion, butter, salt and pepper. After meat has cooked 30 min. spoon potatoes around meat. Roast 1 hour and 15 min longer, stirring potatoes twice, until temperature in meat reaches 150 derees. Sprinkle wiht parsley.
