Rotisserie Chicken with Peanut Butter, Carrot and Cucumber Ribbons

Ingredients

1 cup couscous

1 cup boiling water

6-8 cups salad greens

1/4 cup italian salad dressing

1 small cucumber

2 large carrots

1/2 cup peanut butter

1 tbsp soy sauce

1 tbsp Franks sauce

6 tbsp hot water

1 medium rotissiere chicken sliced into bite size pieces


Directions

Mix couscous with boiling water, let stand 5 minutes. Mix salad greens with salad dressing. Use peeler, wide if possible, to make ribbons of both carrots and cucumber. Mix the peanut butter with the soy sauce, Franks sauce and hot water. To assemble either on a platter or on individual plates: Put couscous in center of plate, surround with lettuce. Top with ribbons of carrot and cucumber and sliced chicken. Pour peanut sauce over the entire plate or platter. Note, sauce will pour better if hot, rewarm in microwave if necessary.
