Delicious, fresh tasting salsa. Cans well and great way to use up those bountiful end of season tomatoes!

Ingredients

10 cups tomatoes peeled and chopped

1 large Green pepper chopped

1 large Red pepper chopped

5 cups onion chopped

2-3 yellow banana pepper chopped

2 jalapenos* chopped

1/4 cup sugar*

1 cup vinegar

4 teaspoons pickling salt**

1 teaspoon Black pepper

1 large tomato paste

1/2 bunch Fresh Cilantro


Directions

Simmer 1/2 hr, stirring often, at the end of cooking time add 1/2 bunch of cilantro if desired. Jar and process, 35 minutes for pint jars and 45 minutes for quart jars. Makes 8 pints Enjoy! *We use less sugar and more jalapenos. **Pickling salt is best when canning as it does not cause clouding of canned goods. Makes 8 pints
