This is a recipe I adapted from Taste. I like to add thyme to this recipe and add more veggies. Add a bit of chilli for a kick. One of my all time favourites.

2 tablespoons olive oil
500 g sausages (organic pork & sage good but any will do), chopped into 3cm pieces
150 g nitrate free bacon roughly chopped
2 cloves garlic chopped
1 teaspoon paprika
400 can diced tomatoes
2 cups stock
2 zucchini
2 small or 1 large capsicum
1 bunch silverbeet or black/tuscan kale
1/2 cup parsley chopped
1 onion halved, thinly sliced
