Sauteed Baby Bok Choy with Lime and Garlic

Ingredients

1 teaspoon Avocado Oil or Olive Oil

2 Garlic cloves finely chopped

1 Lime freshly juiced

1 teaspoon Rice vinegar

2 Baby Bok Choy

Salt and pepper to taste


Directions

Cut baby bok choy into 3 equal pieces, rinse well, and drain. Heat oil in non-stick skillet over medium-high heat. Then add garlic and saute for about a minute until fragrant. Add bok choy and stir until mixed with oil and garlic. Add lime juice, rice vinegar, salt and pepper. Saute until just wilted, about 1-2 minutes. Serve hot and enjoy!

Great way to fix bok choi! Picky Wife thought it was too sour, so I guess I'll leave out the vinegar next time. But she was impressed that we had a great sautéed vegetable with only one teaspoon of oil. Served with poached shrimp in cocktail sauce and black-eyed peas.
