Sauteed Sweet Potatoes

Ingredients

2 medium Sweet potatoes peeled & 1cm pieces

1 pinch Cayenne pepper

50 ml Water

1/4 Vegetable stock cube

1 pinch Asafoetida

25 grams Butter

2 tbs Parsley chopped


Directions

Heat oil in sauce pan Add the potatoes and cayenne pepper and saute over a high heat Next add the water, crumbled stock cube, asafoetida and a little salt, cover and down the heat Cook until water has evaporated, then add the butter and brown nicely. Once cooked add the parsley, mix well and serve.
