Scallops in Lime Juice And Glazed Endive Salad

Ingredients

1 ts Green peppercorns; crushed

2 Limes; juice of

1 Lime; grated fine , zest

Salt and pepper

; of

450 g Fresh king scallops

75 ml White wine

75 ml Extra Virgin Olive Oil

1 Shallot; grated


Directions

Remove the roe, clean and thinly slice the fresh scallops. Mix all the other ingredients together and place into a container. Add the sliced scallops and leave in the marinade for approximately 20 minutes. Remove and place on to a plate with a little warm glazed endive. Drizzle with a little marinade.
