Seafood Gumbo

Ingredients

1 pound Chicken quarters or backs

1/3 cup Oil

1/3 cup Flour

2 cups Onions chopped

1 cups Celery

1 medium Bell pepper

3 cloves Garlic

8 oz can Tomato sauce

1 can Tomatoes

3 Bay leaves

1 teaspoon Cavenders Greek seasoning

1/2 teaspoon Thyme

1 teaspoon Kitchen bouquet

1/2 teaspoon Allspice

1 tablespoon Sugar

1 pound Frozen sliced okra

Parsley

1/2 Dozen Crabs

1 pound Flounder or other fish

2 pounds Shrimp


Directions

Cover chicken with water and boil until tender. Remove meat from bones and chop. Add oil to pot and heat. Add flour and make a roux to about peanut butter color. Add onions,celery,and bell pepper and sauté. Add tomato sauce, tomatoes, some chicken stock,and seasonings. Simmer for about half hour. Add okra and cook 15 minutes more. Break crabs in half and add. Cook about 15 minutes. Add stock an necessary. Add flounder ,shrimp and chicken. . Simmer and adjust seasoning. Serve over rice and add a little file’.
