Directions

0. preheat oven to 400 degrees F 1. Toast sesame seeds on medium heat, mix with 1/2 cup flour and put in a flat dish for dredging 2. beat egg with milk and set in a bowl large enough for dipping 3. shake fish fillets in a plastic bag with flour 4. dip fish fillets in egg mixture and dredge in sesame flour 5. heat 1 Tbsp Canola oil with 1 Tbsp sesame oil in frying pan 6. brown fish fillets a few minutes each side. Do not cook completely. 7. butter a baking pan, then transfer browned fish fillets into pan 8. bake in oven 10-14 minutes [depending on thickness] While fish is baking 1. melt butter in skillet used to brown fish 2. Saute garlic, ginger, and leek [and mushrooms if using] 3. Add wine, stock, soy sauce, honey. Reduce by 1/2 4. serve sauce over or on the side of fish
