Ingredients

2 Tbs. olive oil

1-1/3 cups Shallots minced

2 cloves Garlic

2 15 oz. packages frozen peas

5-1/2 cups broth

1/4 cup mint leaves


Directions

Cook shallots in oil, add garlic, cook 5 more minutes. Add peas, cook 1 min., add broth & simmer for 10 min. Cool. Puree soup with fresh mint leaves. Can be thinned with more broth. Can add some sour cream to the soup. Serve with dollop of sour cream & mint leaf.
