Shrimp and White Bean Stew

One of my favorites both for its flavors and ease of preparation. Great weeknight meal.

Ingredients

2 tablespoons olive oil

1 medium onion finely chopped

3 cloves garlic crushed

3 cups cannelini beans cooked

14 ounces canned tomatoes diced and drained

1 teaspoon salt

1/2 teaspoon dried rosemary

4 cups bottled clam juice or fish stock

1 pound medium shrimp peeled and deveined

1/4 cup parsley finely chopped


Directions

Heat oil in large enameled cast-iron casserole. Add onion and garlic and cook over moderately high heat, stirring frequently, until the onion softens, about 5 minutes. Stir in the cannelini beans, tomatoes, salt, and rosemary and pepper. Add the stock and bring to a boil. Reduce the heat to moderately low, and simmer until the stew is slightly thickened, about 15 minutes. Add the shrimp and simmer just untiil cooked, about 2 minutes. Stir in the parsely and serve.
