Skillet Potatoes

Ingredients

5 tablespoon Butter

1 cup Celery chopped

1/2 cup Onion chopped

2 cloves Garlic minced

1 can (12 oz) Chicken broth

1/4 cup Water

4 cups Potato cubed

1 cup Carrot sliced

1/8 teaspoon Pepper


Directions

In a large skillet, melt butter. Saute celery, onion and garlic till tender. Add broth, water, potato, carrot and pepper. Heat to boiling, reduce heat, cover and simmer for 15 minutes, stirring occasionally. When veggies are tender, uncover and cook 5 minutes more or until broth is slightly thickened, stirring often.
