Slow Cooker Enchilada Quinoa

Ingredients

1 C quinoa rinsed, uncooked

1/2 C water

1 onion small, diced

2 cloves garlic minced

1 red pepper diced

2 (15oz) cans black beans drained and rinsed

2 (10oz) cans red enchilada sauce

1 (15oz) can diced tomatoes

1 (4.5oz) can chopped green chiles

1 C corn frozen

1 lime juiced

1 t ground cumin

1 T chili powder

1 1/2 C cheddar shredded


Directions

Place quinoa, water, onion, garlic, red pepper, beans, sauce, tomatoes, chiles, corn, lime juice and spices into slow cooker. Cook on high for 3 hours. Stir in half of the cheese, and sprinkle the other half on top. Cook for another 15 minutes.
