Smoked Cajun Chili

Ingredients

2 tablespoons Vegetable oil

2 tablespoons Salt

2 tablespoons Chile Powder

2 tablespoons Cummin

2 tablespoons Garlic powder

2 tablespoons Onion powder

2 tablespoons Brown sugar

2 tablespoons Oregano

1 tablespoon Black pepper

1/2 tablespoon Cayenne pepper

2 tablespoons Minced garlic

1 1/2 cup Minced onion

1 cup Minced celery

1 (15 oz) can Kidney beans

1/2 tablespoons Honey

1 1/2 lb Ground beef

1 1/2 lb Andouille sausage

3 cup Crushed tomatoes

3 cup Diced tomatoes

2 cup Beef stock


Directions

Smoke beef and sausage for 1 hour (can be skipped if you do not have a smoker). Mix seasonings together in a medium sized bowl. Add vegetable oil into a large pot. Saute celery, unions, and garlic on medium heat for 5 minutes. Add chopped ground beef, diced sausage, and seasonings. Saute for 10 minutes or until ground beef is browned. Add crushed tomatoes, beef stock, honey, and bring to a boil for 15 minutes. Add diced tomatoes and simmer on low heat for 1 hour.
