Smoked Salmon Salad

Ingredients

Into large pieces

2 tb Yellow mustard

2 tb olive oil

12 oz Salmon fillets; smoked and

1 pn Sugar

1/2 Red leaf lettuce head;

salt and pepper to taste

1 Butter leaf lettuce head;

2 tb White vinegar

8 Tomato wedges

Into large pieces

1/2 Cucumber; peeled, sliced

1/2 c Plain yogurt

1 tb Prepared horseradish


Directions

In a bowl, whisk together vinegar and mustard. Add olive oil while whisking, then add yogurt, horseradish and sugar. Season with salt and pepper.
