Smoked Turkey Pea Soup

Ingredients

5 cups stock or water

6 oz split peas

1 smoked turkey wing

1 red potato cubed

3 baby carrots sliced into coins

0.5 tsp garlic salt

1 pinch garlic/garlic powder to taste

1 pinch crushed red pepper to taste


Directions

Boil water or stock in a large, tightly-covered pot. Add the rest of the ingredients and simmer for 90 minutes. When cool enough to handle, remove the turkey meat from the bones, add it back to the soup, heat through and serve. Discard the bones. Surprisingly the smoked turkey alone, although high in sodium, does not add enough salt to the dish.

Alternatively, place all ingredients in a crock pot and cook on High for 6-8 hours, then cool and remove the turkey meat from the bones. [I posted this recipe.]
