Ingredients

1 pound Bacon diced

1 pound Chicken breast cubed

1 pound Andouille Sausage sliced

1 stick Butter

1 large Onion diced

1 large Red or Orange Bell Pepper diced

1/2 bulb of Garlic minced

2 teaspoon Cajun Seasoning

1 teaspoon Cayenne Pepper

1/2 teaspoon Tabasco Sauce

1 teaspoon Worcestershire Sauce

2 1/2 cups Chicken broth

2 cups Rice

1/2 cup Parsley diced

3 stalks Celery diced

1/2 cup Green onion diced

1 pound medium size Shrimp - peeled and deveined

Directions

I prefer to make this recipe in a heavy cast iron jambalaya pot. Dice the uncooked Bacon and brown in the pot. Add the cubed Chicken breast and sliced Sausage and brown the mixture. Add the butter, Onion, Bell Pepper, and Garlic and saut? with the meat for 5-10 minutes. Add the Seasonings, Chicken broth, and uncooked rice to the mixture; reduce heat and cover to let the rice cook. Stir every 10 minutes to keep from burning. Once the rice is almost completely cooked, add the Parsley, Celery, Green Onion, and Shrimp. Stir well, cover the pot, and allow the mixture to simmer for another 10 minutes until the shrimp is cooked. Serve and enjoy!
