Spicy Chicken Thighs (or tortillas)

Simple, grilled skin-on chicken thighs with optional flour tortillas and fresh herbs

Ingredients

2 pieces skin-on boneless chicken thighs

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon paprika

1 tablespoon chili powder

1 teaspoon salt

2 tablespoons olive oil

2 tablespoons lemon juice

3 pieces flour tortillas heated

2 tablespoons fresh mint chopped

2 tablespoons fresh cilantro chopped


Directions

Spread boneless, skin-on chicken thighs flat on a plate or chopping board. Spread dried spices (onion powder, garlic powder, paprika, chili powder and salt) evenly on both sides of each chicken thigh. Smother seasoned thighs in olive oil. Grill on hot grill plate for 10-15 minutes or until cooked through. Serve alone with lemon juice, or serve in tortillas topped with chopped mint and cilantro and lemon juice. *Australian measurements (e.g. tablespoon = 20ml)
