4 medium russet potatoes

1 tablespoon extra-virgin olive oil plus more for brushing

1 1/2 pounds boneless top sirloin steak (about 1 1/2 inches thi

Kosher salt and freshly ground pepper

3 ounces soft blue cheese (about 3/4 cup)

3 tablespoons sour cream

3/4 cup chopped fresh parsley chives and/or scallions

1 shallot, sliced or 2 tablespoons diced red onion

1/2 cup ruby port or red wine

1 cup low-sodium beef broth

3 tablespoons cold unsalted butter

Made the potatoes this time. Blue cheese mix was really good. Used mostly scallions and a little fresh basil and oregano. Still put some cheddar cheese and salt on my potato, but felt like it could also use some butter. But the cooking method was also quite nice. Not only did they cook well but also did have nice skin. Followed cooking times exactly, but my potatoes weren't Russet and were as giant as Russet can be, so plan accordingly

Didn't get to make potatoes but sauce for steak was tasty. Used Adobo on steak, just lightly coat next time. Also only cooked for about 3min on each side being pressed down with another heavy pan.
