Steamed Egg

Ingredients

2 tb Coconut cream or single

; a large pinch of

8 lg Eggs; beaten lightly

1 lg Red chilli; de-seeced and

; chopped finely, or

salt and pepper to taste

2 Garlic cloves chopped finely

2 tb Chopped spring onions

1 tb Fish sauce or light soy

125 g Shelled roughly chopped

Oil or butter for greasing

; chilli powder

A few leaves of fresh basil

; chicken (4oz)


Directions

Put all the ingredients in a glass bowl and mix them thoroughly by stirring quickly with a large spoon for several seconds. Divide among four well-oiled or buttered ramekins or other suitable heatproof bowls. Steam in a steamer for 8 minutes. Alternatively, you can cook them in a bain-marie in the oven at Gas Mark 4/180?/350F for 25-30 minutes. Serve warm or cold.
