Stir-Fried Garlic Shrimp

Ingredients

2 lb Large uncooked shrimp,peeled

2 tb Sugar

Lemon juice

1/2 c Cilantro, chopped

6 tb Vegetable oil

8 cl Of garlic, minced

4 tb Anchovy paste (optional)

Black pepper

1 1/2 c Water


Directions

Place the garlic, cilantro and 4 tablespoons oil in a blender or food processor. Blend until smooth. Heat the remaining oil in a frying pan and add the garlic mixture. Stir-fry for 2 minutes. Add the shrimp and stir to coat with garlic mixture. Add the water, anchovy paste, sugar and pepper to taste and stir-fry until the shrimp turn pink and curl, about 5 to 8 minutes. Sprinkle with a little lemon juice and serve warm.
