Strawberry Almond Mixed Greens Salad

Ingredients

1

1/8 cup liquid Honey

1/8 cup olive oil light tasting

1/8 cup rasberry flavoured vinegar

1/2 tsp paprika

1 tsp poppy seeds optional

1/2 tsp dried onion flakes optional

1/4 tsp Worchestershire sauce optional

1

1 big bowl mixed greens Romaine, spinach, radicchio, dandelion, arugula, iceburg

1/2 cup strawberries up to 3/4 cup, sliced

1 handful sliced almonds


Directions

1. Mix dressing ingredients together 2. Add strawberries and almonds to mixed greens 3. Pour dressing over salad 4. Present as is or toss 5. Enjoy

I loved this salad; it makes a wonderful light lunch. I used microgreens, romaine and baby arugula and fresh organic strawberries from the farmers market.

Love the dressing! Really great with strawberries! It is flavorful without being over the top. It is a wonderful dinner salad for a heavier meal or for a light dish on a summer evening. Thanks for posting!

Easy and quick to make. Everyone liked it.

If strawberries are out of season you can substitute with other fruit. I've used Manderin oranges, caned diced peaches. Use whatever mixture of lettuce you prefer (baby greens, spinach only or whatever). Go ahead and experiment. [I posted this recipe.]
