Preheat oven to 400 degrees. Pierce potatoes with fork, place on oven rack and bake until cooked through; about 1 hour and 15 minutes. Transfer to baking sheet and cool 5 minutes. Cut off top 1/3 of each potato and remove flesh from bottoms. Discard tops. Add rest of ingredients and fil the potato shells. Bake filled potatoes at 400 until heated through, about 25 minutes. Add 1 tablespoon and blue cheese to tops before serving.
