Summer Corn Salad

Ingredients

6 ears Fresh corn kernels husked and cleaned

3 large tomatoes diced

1 large onion diced

1/4 cup Fresh basil chopped

1/4 cup olive oil

2 tablespoons white vinegar

Salt and pepper to taste


Directions

1. Cook corn in lightly salted boiling water for 7-10min, or desired tenderness. 2. Drain, cool, and cut kernels off cob. 3. In bowl, toss together corn, tomatoes, onion, basil, oil, vinegar, salt, and pepper. 4. Chill until serving. Time Saver/off season: Used whole canned kernels.
