Delicious and light dressing for a perfect taco salad.
1. Blend all vinaigrette ingredients except the olive oil until smooth. While blender is running on low speed, slowly pour in olive oil.
2. In a medium-sized bowl, combine corn, beans, and diced bell peppers. Pour enough dressing to cover well and toss.
3. Layer lettuce on plates. Top with corn and bean mixture. Add tomatoes, green onions, avocado, and queso fresca as desired. Drizzle additional vinaigrette if needed. Top with crushed tortilla chips.
