Taco Salad with Lime-Cilantro Vinaigrette

Ingredients

6 tablespoons lime juice

3 tablespoons white vinegar

3/4 cup cilantro leaves

1 tablespoon honey

2 tablespoons brown sugar

1/4 teaspoon salt

2 small cloves garlic minced

1 tablespoon ground mustard

3/4 cup light olive oil

6 cups lettuce roughly chopped

2 large tomatos chopped

3 green onions sliced

2 avocados diced

2 cups corn

1 14-oz can black beans rinsed and drained

1 red bell pepper diced

1 cup queso fresca crumbled

Tortilla chips


Directions

1. Blend all vinaigrette ingredients except the olive oil until smooth. While blender is running on low speed, slowly pour in olive oil. 2. In a medium-sized bowl, combine corn, beans, and diced bell peppers. Pour enough dressing to cover well and toss. 3. Layer lettuce on plates. Top with corn and bean mixture. Add tomatoes, green onions, avocado, and queso fresca as desired. Drizzle additional vinaigrette if needed. Top with crushed tortilla chips.

This was very tasty! Next time, I’ll chop the vegetables and make the dressing in advance so dinner comes together quicker! We used two bags of nice crispy romaine. It made a lot of salad! For that quantity, next time I’d maybe double the salad dressing.

The dressing is soooooo good

I used spring mix for lettuce. Turned out pretty well. Honestly the dressing recipe made soooo much, it might get wasted so I recommend halving it.
