Great breakfast dish for a crowd. Good to take camping--ready ingredients ahead of time.
Have all potatoes and onions diced and ready to cook before you begin.
Mix the eggs with a splash of milk or warm water
Salt and Pepper eggs to taste
Brown Sausage and remove from pan
Add 1-2 T oil
Add potatoes and cook until crispy brown
Put onions in with potatoes and fry for a few more minutes
Add sausage and eggs (careful not to "chop" eggs while cooking--gently push them around so they stay fluffy
Add cheese
Serve in warm tortillas
Have hot sauce on hand
