Tequila Lime Chicken

This is similar to the Fajita marinade, but different. Things just go better with Tequila!

Ingredients

1/2 cup Gold Tequila

1 cup Lime Juice freshly squeezed or Minute Maid, frozen

1/2 cup Orange juice

1 tablespoon Chili powder

1 teaspoon Cumin

2 teaspoons Kosher salt

1 teaspoon Black Pepper freshly ground

1 Jalapeno pepper seeded and minced

1 tablespoon Garlic minced

1/4 cup Cilantro minced

6 Chicken breasts use either boneless or skin on breasts


Directions

Combine all ingredients and place in a ziplock bag. Reserve some of the marinade for basting. Refigerate 8 hours. Grill on gas or charcoal grill for about 8 minutes per side. Baste while grilling. Do not baste with used marinade. Remove from heat, cover and allow chicken to rest for 5 minutes.

Great recipe that pleases any time of the year. Just a word to the wise. Don't use "gold" tequila. Use 100% blue agave tequila. Either blanco, reposado or anejo. Doesn't matter much. Gold tequila is fake and is usually cut with grain alcohol.... disgusting. Be smart and happy cooking :-)

1 Star for moist chicken. However 1 Cup of lime juice is WAY too much. All we could taste was lime through the whole meal. Nobody finished a single piece of the chicken. People say everything like chicken, but this chicken tastes like lime. When making the marinade I had a feeling it was too much but followed the recipe anyway. I think it would be a great recipe if the lime was cut down to AT LEAST 1/2 cup = to the tequila. We make a tequila lime chicken using an old Applebee's recipe, and nothing compares to it. It also has only a few drops of lime to offset the tequila and spice.
