Teriyaki Stir-fry

This is one of our family's favorite meals, especially when served with our home-made Honey Teriyaki Sauce. Most everyone takes seconds & it's healthy too!

Ingredients

1 pound chicken/pork/beef sliced

2 tablespoon Oil

2 cups vegetables chopped

1/2 pound Mushroom sliced

1 cup Onion sliced

1 can Water Chestnuts sliced

1 cup Teriyaki Sauce

1 1/2 cup Cooked Rice


Directions

Slice meat vegetables into small pieces. Can use a variety of vegetables, such as peapods, broccoli, celery, green & red peppers. Cook rice per package instructions Heat oil in skillet & cook meat on medium high until lightly brown (about 3 minutes), remove from pan. Add a little more oil to the pan (just enough to coat the bottom). Stir in mushrooms & onions and cook about 4 minutes. Stir in remaining vegetables and water chestnuts, cooking on medium high about 2 minutes. Be careful not to over-cook, these should still be crisp when done cooking. Add cooked meat and 1/4 cup Teriyaki Sauce. Cook 2 minutes or until heated through, stirring occasionally. Server over rice.

Very good! I added a little cornstarch to thicken the teriyaki sauce.

My family really liked this, especially my teenaged daughter. She asked me to put it on my "make again" list. We put crushed red peppers and soy sauce on the table for anyone who wanted more seasoning, but I liked it just the way it was.
