Thai Pork Salad

Ingredients

1 1/4 lbs pork tenderloin thinly sliced

salt

2 tbs vegetable oil

5 cups shredded napa cabbage

1/4 cup torn mint

2 grated carrots

2 sliced scallions

2 tbs lime juice

2 tsp asian fish sauce


Directions

Season the thinly sliced pork tenderloin with the salt. In batches brown the vegetable oils in a large skillet over medium high heat, heat 1-2 minutes per side. Toss the pork with the cabbage, mint, carrots, scallions, 2 tbs vegetable oil, lime juice and fish sauze.
