Thai Spicy Basil Chicken

This recipe is by my girlfriend. She is from Thailand, and I am always trying to learn more about authentic ways of preparing Thai dishes. This is one of my favorites! So Spicy! So Yummy!

Ingredients

12 ounces Chicken breasts boneless and skinless ground or minced

4 cloves garlic finely chopped

2 Shallots minced

6 Thai Chilies finely chopped

1 dash Ground white pepper

3 large Eggs

2 1/2 tablespoons Vegetable oil

1/2 teaspoon Soy sauce sweet

1 bunch Thai basil leaves stem removed

1 1/3 tablespoon Fish sauce

1 teaspoon Granulated sugar


Directions

1. Add oil to heated wok or skillet if wok not available 2. Add chopped garlic and shallots. Stir fry the garlic and shallots until aromatic, then add chicken meat. Use spatula to stir fry and break up chicken into small lumps. When the chicken meat changes color (about 4-5 minutes of cooking), toss in chilies, fish sauce, sugar, and soy sauce 3. Continue to stir fry about 2-3 minutes then add basil leaves and stir a few times until leaves are wilted 4. Sprinkle white pepper, stir, serve over white rice 5. Top with sunny side or over easy egg

Tasty dish, easy to prepare, pretty good on calories. I went light on chilies (jalapeño, to Thai on hand) and used ground turkey. A little mild for me, so I added some chili miso sauce to my serving. All in all, worth making again.

This is a common dish that I prepare in our house. My girlfriend is Thai and I am always trying to make Thai dishes as authentic as possible. This is her recipe and I must say it is phenomenal! So Spicy, and the basil really adds to the robust flavor! The egg for me is a must have, as it really compliments the chicken and rice with every bite. If you are a Thai food fan, this is a dish you won't want to pass up!
