Ingredients

1 bag baby spinach

1/4 cup pineapple juice

3 tbsp red wine vinegar

1/4 or less cup EVOO

diced fresh pineapple or sliced strawberries

2 tbsp almond slivers (optional

coconut flakes

crumbled goat cheese

Directions

In small bowl, whisk together pineapple juice, red wine vinegar and EVOO. In large bowl, toss spinach with vinaigrette and remaining ingredients.
