Turkey Chili

Ingredients

2 tbs Olive Oil

1 lbs Lean Ground Turkey

1 packet Taco seasoning

1 cup Frozen corn

1 can Black beans drained & rinsed

1 can Pinto Beans drained & rinsed

1 can Kidney Beans drained & rinsed

1 can Chicken Broth

2 cans Rotel Tomatoes with juice


Directions

Spray a 6-8 quart pot with non-stick spray. Warm the oil in the pot over medium-high heat. When the oil's hot, add the turkey and cook for 5 minutes, or until no longer pink. Add the taco seasoning and stir until the meat is well coated with the seasoning. Add the corn, beans, broth, and tomatoes. Bring to a boil. Reduce the heat to medium-low and simmer, uncovered, for 20 minutes. Or I often place in a crock pot and leave it on low until I'm ready to eat.

Amazing. Add 2 sliced jalapeños and use spicy taco seasoning for kick. And I just put the whole bag of corn in there. Delish

This was definitely good but not my favorite. I'm not sure I'd make it again. Really this is because my husband is not fond of cumin (in the taco seasonings envelope) or too much spiciness overall. It was better the next day over rice.
