Veggie Rolls

Veggies, Rice and Cheese wrapped in Puff Pastry

Ingredients

1 cup Brown Rice

1/2 cup Corn kernels

1/2 cup Frozen Peas thawed

1/2 cup Carrot grated

1 Onion finely chopped

1 stick Celery finely chopped

1 Red Capsicum roughly chopped

2 Eggs lightly beaten

1 cup Cheddar cheese grated

1 tablespoon Fruit Chutney

1/4 teaspoon Chili powder

3 sheets Puff Pastry thawed

1 Egg lightly beaten, for glazing


Directions

1. Combine rice, vegetables, eggs, cheese, chutney and chili powder, mixing well. 2. Spoon mixture onto the edge of 3 sheets of pastry, roll up (sealing with water) and cut each roll into three. 3. Place rolls on lightly floured oven tray and brush with egg. Bake at 210 degrees Celsius for 30 minutes or until golden brown.
