Virginia's Candied Yams

Simple and quick version of the old fashioned candied yams.

Ingredients

6 medium Sweet potatoes

1 1/2 cup Sugar

1/2 teaspoon Salt

1 teaspoon Cinnamon

1/2 teaspoon Nutmeg

3/4 stick Margarine sliced into pats

1 teaspoon Lemon juice

2 tablespoon Flour

1/2 cup Water


Directions

Peel and quarter potatoes and place in buttered 9x12 baking dish. Combine dry ingredients and sprinkle over potatoes. Cover with pieces of margarine. Sprinkle with lemon juice over all and add water over mixture. Bake at 400 degrees about 1 hour turning potatoes to coat every 15 minutes. Syrup will be thick.

This recipe has become a tradition in my house. My entire family loves it, including my picky teenage sons. My brother-in-law called to see if I'm making it for Thanksgiving again! If it was remembered for an entire year, it has to be something special. It cooks well in the crockpot also, when your oven is occupied with a turkey. I'd give this one 10 stars!
