This family recipe is a take on the traditional New England Whoopie Pie, with a brownie cookie and filled with a boiled cream this whoopie pie will not disappoint!
Preheat oven to 350.
Prepare base for boiled cream first to allow ample time to cool.
Chocolate Cookies:
Melt chocolate and butter in stove top pot over low heat, until completely melted. Remove from heat and stir in granulated sugar. Temper eggs, combine into chocolate mixture. In a separate bowl, combine flour, baking powder and salt. Slowly add into chocolate mixture until combined, add vanilla. Drop cookie batter in heaping teaspoon balls onto foil covered baking sheet (use double baking sheets to prevent bottom of the cookies from burning). Cook at 350 for 9 minutes, remove from oven and cool before moving to wire rack. Repeat until entire batter has been used. Once cooled, match cookies into whoopie pie sets.
Boiled Cream:
Cook milk and 4 1/4 tablespoon flour over medium heat until pasty. Cover with plastic wrap to prevent film from forming and move to refrigerator to cool completely. Once cooled (a few hours later) beat in mixer until smooth, then beat in the following: shortening, sugar salt, vanilla and confectioners sugar. Pipe cream onto whoopie pies and enjoy!

Cookies:
10 oz chocolate
2 1/2 sticks butter
5 cups sugar (1075g)
10 eggs
5 cups flour (720g)
1 1/2 teaspoon baking powder
1 1/2 teaspoon vanilla
1 1/2 teaspoon salt
Boiled Cream:
2 1/4 cup milk
3/4 cup + 3/4 tablespoon flour
2 1/4 cup shortening
2 1/4 sugar
3 pinches salt
1 1/2 tablespoon vanilla
1 1/2 cups confectioners sugar
