Yellow Squash Casserole

Ingredients

3 tb Margarine

1 4-oz can Green chilies chop

1 1/2 c Cheddar cheese shredded

10 Saltine crackers crushed

Salt and pepper to taste

4 Yellow summer squash sliced

1 medium Onion chopped


Directions

In a skillet, melt margarine over medium heat. Saute squash and onion until crisp-tender. Remove from the heat; stir in chilies, crackers, and salt and pepper. Spoon into a greased 1 1/2 qt. casserole. Top with cheese. Bake at 350 degrees for 15-20 minutes. I topped it with goat cheese instead of cheddar. Yum!

Great recipe! I didn't have any chiles but I did have chives so I threw some of that in instead. It was fabulous. Even better the next day reheated. I might try ritz crackers next time but maybe not cause if was great this way. Thanks!!!
