If tangy, citrus-infused dinners are your thing, then this sea-inspired twist on a classic piccata will hit you right in the taste buds. Delicate white fish bathed in a creamy, lemon-caper sauce is an elegant, fresh way to please any dinner table.
1. Rinse fish fillets and gently pat dry. Season lightly with salt and pepper on both sides.
2. Mix flour, pepper, salt, and paprika in a wide shallow bowl.
3. Heat pan on medium and add butter to melt. Dredge each fillet through flour, coating generously, and place in pan. Cook for 2-3 minutes on each side, until fillets are tender and done. (Make sure to add more butter into the pan as they cook to prevent sticking. Thin fillets can stick and be difficult to flip.)
4. Remove fillets from pan and set aside. Wipe the pan clean and return to heat.
5. Make the sauce, starting by adding the wine to the pan and bringing it to a light boil for 1 minute.
6. Add the flour/butter mixture, capers, and shallots, and whisk until melted and combined.
7. Add remaining butter, lemon juice, lemon zest, dijon, paprika, salt, pepper, and cayenne and whisk until melted and combined. Turn heat to low and whisk continuously for 1-2 minutes, until the sauce is creamy and coats the
back of a spoon.
8. Return fish to pan and spoon sauce over, allowing the fillets to warm in the sauce with the pan on low for 1-2 minutes.
9. Top with fresh parsley, serve, and enjoy!
