A decadent chocolate cake is a recipe that anyone who loves baking needs in their back pocket. So we took our classic chocolate cake and added the delicious, creamy flavor of malted milk for a rich, satisfying cake that hits all the right notes.
1. Preheat oven to 350 degrees fahrenheit. Grease three 8-inch cake pans and line the bottom with parchment paper. Set aside.
2. In a large bowl, whisk together the dry ingredients for the cake. In a small bowl, combine chocolate milk, vanilla, and sour cream. Set aside.
3. In the bowl of a standing mixer, cream together the butter and sugar on high speed until fluffy, or about 4 minutes. Be sure to scrape the bottom of the bowl thoroughly at least once while mixing.
4. Add eggs on medium speed, one at a time, until just mixed.
5. With the mixer on low speed, add the dry ingredients in three additions, alternating with the milk mixture, and ending with dry ingredients. Mix until just combined.
6. Stir in the boiling water until just combined. Then, split the batter between the three cake pans.
7. Place the pans in the oven and bake for 25 to 35 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the cakes to cool on a rack for 15 to 20 minutes before inverting. Continue to cool until full at room temperature. You can also place the cakes in the refrigerator for 30 to 45 minutes to cool before icing.
9. To make the icing, beat the butter on high speed until creamy and light in color. With the mixer on low, add the sugar slowly. Add malted powder and cocoa powder on low until just mixed.
10. With the mixer on low speed, slowly add the heavy cream, along with the vanilla and salt. The frosting should be light an fluffy at this stage.
11. To finish your cake, place a small dollop of icing on your cake dish (this will hold your first layer in place). Add your first layer of cake, topping with icing in the middle and a sprinkle of crushed malted milk ball. Repeat with the next layer of cake. Top with your final layer, adding icing to the top and sides as desired. You can use a straight edge to scrape the sides for an even layer of icing. Top with whole malted milk balls.
