This is one of those quick easy meals you can do for lunch or Sunday evening! Tastes great - leftovers are nice on toast for breakfast too.
Peel and dice potatoes, boil or steam 5 minutes or until tender; drain. Place potatoes in a bowl, mix in flour, shallots and cream.
Cook bacon in large pan until crisp.
Pour potato mixture over bacon in the pan. Cook over medium heat until potato mixture browns underneath. Turn over with a spatula and brown on other side, serve immediately.
