Similar to the traditional Stuffed Pepper dish, this ground beef and brown rice recipe can serve more when you don't have enough green or red peppers handy. It has a few twists from the regular stuffed pepper beef/rice mixture.
Preheat oven to 350 degrees. Cook the rice first. Depending on what type of rice you use, it may take longer. I used brown rice and it takes a good 20-25 minutes. Follow the instructions on the box/bag. I added a little more water for the rice to help with the sauce when I add it to the ground beef mixture. Leave the rice to cook. Cook and brown the beef under medium to high heat. Mix it here and there to get it browning. As it is browning, chop red pepper, onion and tomato. When beef is fully brown, add red pepper and onion. Mix. Then add garlic powder, chili powder, cumin, Worcestershire sauce, soy sauce, salt and pepper. Mix well and give it a taste. I found I added more salt, chili powder, soy sauce and garlic powder. Add tomatoes. If the rice is ready, add to beef mixture and combine well. Add chickpeas, mix well, give it a taste test then spoon into standard size casserole dish. Add shredded cheese on top. I thought cheese on top of this would be a weird combination, with the chick peas, but it was great! I'm so glad I didn't leave it out. Bake for 20-25 min and broil for last 7-10 min. Yum! I served it with a simple green salad, but I feel a standard iceberg lettuce salad with a simple lemon/olive oil type dressing would compliment it well. Hope you enjoy it!
