Depending on the amount of spice you like, add more or less chipotle powder. This favorite spices up beans, tofu, or chicken for a more interesting leftover meal, and is great as a dip for vegetables. Spread it in a thick layer on white-fleshed fish, and bake for a quick and delicious fish entrée.
Makes 1 1/4 cups.
Place all the ingredients in a wide-mouthed glass mason jar or cup that will fit an immersion blender without splashing. Blend with the immersion blender until creamy. Adjust the seasoning to taste. Place a lid on the jar. Allow the flavors to develop for 1 hour or more in the refrigerator. The mayonnaise will keep for 1 to 2 weeks in the refrigerator.
