Healthier take on a apricot glazed chicken wings.
Put the apricot preserves, soy sauce, and vinegar into a large microwave-safe bowl. Microwave for 30 seconds on high power, then whisk until the preserves are dissolved. Peel and finely grate the ginger to yield 1 1/2 teaspoon, mince the garlice, and add both to the bowl along with the crushed red pepper flakes. Whisk to combine.
Preheat the broiler to high.
Add the chicken to the bowl and marinate for 15 minutes.
Transfer the chicken pieces to a broiler tray. Broil about 3 inches from the heat until cooked through and well charred on the surface, about 5 minutes per side.
